Evaporation dialog

Apply evaporation only on selected ingredients. Use the checkbox to decide which ingredients are heated and which are added cold. So, if the checkbox is checked the ingredient is assumed to be heated and is subject to evaporation. If the checkbox is not checked the ingredient is assumed to be added after pasteurization and is not subject to evaporation.

The weight of the ingredients with the checkbox checked before evaporation

The weight of the ingredients with the checkbox checked after evaporation

Percentage of evaporation

Evaporation g

Weight of the water that is evaporated.

Cold ingredients

Weight

Weight of the ingredients where the checkbox is unchecked.

Summary

Total weight

Total weight of the ingredients

Final weight

Final weight of all ingredients after evaporation of the selected ingredients.

Evaporation

Evaporation percentage of the final mix. So, this is the value that is used in the recipe when you press OK. The total weight of water evaporated is calculated and applied to the total weight of all ingredients to get a percentage of evaporation used in the recipe.
