Converting a recipe

This is a tutorial of how to add a recipe in volume units to the software and how to change the milk and cream fat content.

Say you find this recipe and would like to input it in the software.

  • 1 cup whole milk
  • 2 cups heavy cream
  • 3/4 cup of sugar
  • 1 tbsp vanilla extract

Step 1

Open Ice Cream Calculator and press New to start creating a recipe.

Step 2

Press the + button above the list to add an ingredient.

Type whole milk in the Find edit and select Whole milk US.

Repeat this with the other ingredients. Remember that sugar is called Sucrose in the database.

Now you should have something like this.

Double click in the Weight field for Whole milk. This will bring up the Volume to Weight converter. Enter the value, units and ingredient and press OK. The dialog tries to recognize the ingredient automatically.

Repeat this for the other ingredients. For the vanilla extract select Water as ingredient. Most liquids have approximately the same volume to weight ratio.

Ok that’s it, we are done. BUT you might need to do one more thing…

Different countries have different fat content of the milk and cream. I am from Sweden and our milk is 3% fat and the cream is 40% fat. So, we have to change the fat content of our milk and cream, and do it in a way so that the total fat content does not change.

Note! In version 0.20 and below this function only works in the milk is named “Milk” and the Cream is named “Cream” so we have to change the name of these ingredients before continuing. Double click on Whole milk and change the name to Milk, then double click on Heavy whipping cream and change the name to Cream.

Next just press the Milk/Cream button. Enter the fat content of the milk and cream you have available and press Update recipe to update the recipe.

OK now we are done!
