Description

Ice cream calculator is a free Windows software for ice cream, gelato, sorbet balancing and recipe creation. It calculates useful data for ice cream making and recipe development. The database currently have 116 ingredients. This is purely a hobby project! If you use it I’d love to hear what you think and also any suggestions for improvements, new features, bugs etc. For more science background I refer you to the references in the documentation.

    Your Ice cream calculator is very interesting.
    If I may make a subjection, it will be help full to have:
    the percentage of overrun supported
    the percentage of optimal overrun
    the maximal percentage of lactose in water
    The maximal percentage of solid non fat dairy

    1. Maximal overrun is presented in the Overrun dialog.
      I don’t know how to calculate optimal overrun and I’m unsure what that means? If anyone knows let me know.
      The maximum amount of lactose and MSNF are related as most lactose come from the MSNF. You don’t want too much lactose to avoid lactose crystallization.
      The general rule is no more that 9% lactose to free water but you can usually go a little higher when using stabilizers.
      To add this to the calculator create a Panel with the data item Lactose/Water and set the max value to 9%.

  2. Just want to say thanks for this calculator. It’s really helpful for both noobs and professionals.

    I have created my own version using excel, not sophisticated as yours of course 🙂
    It has some different approach. IE, you would enter desired % of fat, sugar, MSNF etc and get recipe in grams, based on three main components… cream, milk, SMP.

    Does your calc have this approach? For example, premium quality ice creams have higher % of fat, gelato is low on fat, so i thought i can replicate some premiums… 🙂

  3. Thank you for sharing this valuable tool. Just one small comment regarding exporting the calculated recpie to spreadsheets. I think it would be nice to be able export data to csv table format and not only excel.

    1. The data is exported as a tab delimited file with the extension .xls
      The file will open in the program associated with this extension in Windows.
      So, you can choose any program you like.
      I will have a look at this and maybe I can prompt the user if you want to open the file or save it do disc instead.
