There is no MSNF in vegan ice cream.
What you should do is to load the Vegan chart from the Online charts and use that for balancing vegan ice creams.
Check this KB article and look for the online charts section for instructions how to load the chart.
Then you can try the Wizard with the Vegan option and also checkout this balance article for more info on balancing.

sorry, if this is a beginner question, if I want to formulate and input for vegan ice cream, do I enter MSNF and butterfat with values from plant sources, such as coconut cream, etc? are they interchangeable? or do I fill those values as 0?

Also, in your experience does the vegan ice cream work well with the same target working ratio as dairy ice creams? Or is it different?

I think you should be OK.
A few notes.
If adding from nutritional label you should start from the Nutrition button input.
This will add everything you need automatically.
There are however a few problems you have to be aware of.
1. A nutrition label never shows how much water a product have. It only shows the nutrients of the solids in the product. Everything else is assumed to be water but that is not always correct.
2. A nutrition label does not show different types of sugars (to calculate PAC and POD) so the calculator assumes it is all Sucrose or Lactose (in the case you check the Dairy checkbox).
3. A nutrition label does not show how much milk or cream it contains so MSNF has to be estimated.

I know it can sometimes be difficult to add new ingredients but using the nutrition label and some googling you can usually get pretty close.

So I have been playing with creating a local database from nutritional labels as I keep changing brands of products which are different.

This is my process...I create the item from the nutritional label...I then click on nutrients as I find it adds some missing items or changes sugars into lactose etc...I then click on MSNF...HF...Energy...I wish I could do the PAC/POD but I am unsure how to calculate all the percentages.

But by doing this process, I get a little bit different from your main database...I assume as long as I stay consistent, I should be ok.

If anyone has suggestions of doing the process differently, please let me know.

Thank you.
There were previously some spelling confusion on my side about cacao or cocoa and I just recently renamed all the cacao to cocoa.
I will go through the calculator and see if this is fixed everywhere and I'll update the images in the blog.
Otherwise cacao and cocoa are the same thing in the calculator.

Impressive work! Very usefull!
If you have time some day when working on a new revision, I noticed that the spelling of cocoa is wrong on the ”ingredience data” screen shot, the first picture in this post.

It depends how you cook the mix and to what temp and how long.
I did some tests and cooking in a normal pan to 83C (approx 10 minutes) the evaporation was 3%.
