I immediately chill the mix.(I usually heat to 85C).
At these high temps you don&#039;t need to keep it at that temp.

I heat the mix in medium heat stirring all the time and it takes approximately 10 minutes for a 1 liter mix.
I also use a good digital thermometer to check the temp.
The temp rises quickly at the end of cooking so you have to be careful.
When reaching 79C you can lower the temp to have more control.]]></description>
